Ingredients 

  • 2 ears of corn, husked

  • 1 Tbsp Olive Oil

  • 2 Tbsp Dibble Chipotle Mayo

  • 1 Tbsp Extra Virgin Olive Oil

  • 1 Tbsp Apple Cider Vinegar

  • 1 tsp Sea Salt

  • ½ lime wedge

  • 2 Tbsp finely diced Red Onion

  • 1 Tbsp roughly chopped Coriander

  • 1 tsp Black Sesame Seeds (optional)


Method

  1. Heat the grill to high.

  2. Brush the corn with the olive oil and place them on the grill, turning them every 2-3 minutes until tender and slightly charred.

  3. In a small mixing bowl, whisk together with a fork Dibble Chipotle Mayo, extra virgin olive oil, apple cider vinegar, sea salt and lime wedge.

  4. Brush the freshly grilled corn with the Chipotle Mayo dressing and top with the red onion, coriander and black sesame seeds.

  5. Enjoy!
