A dish made for sharing and a dish PERFECT for Xmas lunch! This vegan take on a taco crescent ring is made with flaky puff pastry and filled with taco beans. Welcome your guests to a slice of this crispy dish and have them dip it in Dibble Chipotle Mayo to complete the celebrations. Happy cooking!

Ingredients 

Filling

  • 2 Tbsp Olive Oil
  • 1 Medium Brown Onion, diced
  • 2 Garlic Cloves, thinly sliced
  • 1/2 Red Capsicum, diced
  • 400g Canned Black Beans, drained and rinsed
  • 400g Canned Kidney Beans, drained and rinsed
  • 125g Canned Corn Kernels 
  • 200g Taco Sauce
  • 15g Taco Seasoning Mix
  • 2 tsp Salt
  • 1 tsp Black Pepper
  • 2 Cups Vegan Cheese, shredded

Crescent Ring

  • 4 Sheets Vegan Puff Pastry, defrosted 
  • 1 Tbsp Vegan Butter, melted
  • 1 tsp Flaky Sea Salt

To Serve


Method 

Filling

  1. In a medium pan on medium heat, add the oil, onion, garlic and cook for 30 seconds. 
  2. Add the capsicum into the pan along with 1/2 tsp salt and 1/4 tsp pepper. Cook for 3 minutes, stirring occasionally. 
  3. Add the black beans, kidney beans, corn, 1/2 tsp salt, 1/4 tsp pepper and cook for 5 minutes, stirring occasionally. 
  4. Add in the taco sauce, taco seasoning, 1/2 tsp salt, 1/4 pepper and cook for 3 minutes, stirring occasionally. 
  5. Transfer the filling into a large mixing bowl and add in the cheese. Combine thoroughly and set aside to cool. 

Crescent Ring

  1. Place one puff pastry sheet on a large chopping board and starting from the top left corner, cut diagonally to the right side of the sheet to cut out a triangle that has a 6cm base. Continue this for the remaining puff pastry sheets.
  2. Preheat the oven to 200°C. 
  3. On a baking tray lined with baking paper, place a small bowl (with a roughly 7cm base) in the centre. Carefully place the puff pastry triangles around the base of the bowl, with each piece overlapping about 2cm onto the adjacent piece. The long and pointy tip should be facing outwards from the bowl. Once the last piece overlaps the first piece, continue going around with one more layer in between each of the first layer's triangles. 
  4. Remove the bowl from the baking tray and carefully add the filling around the centre of the crescent ring. All of the filling should be used and it should be piled up about 6-7cm high. 
  5. Carefully fold the long and pointy tips of the triangles over the filling and into the centre. Gently bend the tips of the triangle along the inner circular edge of the pastry. 
  6. Brush the top surface of the crescent ring with the melted butter and sprinkle on the sea salt.
  7. Bake for 25 minutes or golden brown and let it cool slightly before carefully transferring it to a wire rack to cool for 10 minutes. 

To Serve

  1. Transfer the Taco Crescent Ring to a serving board.
  2. Pour Dibble Chipotle Mayo into a small bowl and place in the centre of the Taco Crescent Ring.
  3. Finally, top with fresh chives.
  4. Enjoy!
